These carrot cake energy balls have all the flavors a regular carrot cake has except it is a no-bake. It comes together with just 5 ingredients and makes the perfect pre or post-workout fuel.
My favorite time of the year is here.. spring which means it is time for all the carrot cake recipes. If you love carrot cake this one is for you! It has all the carrot cake flavor but no baking is required because when it is hot outside I do not like turning on the oven.
This is also a perfect pre or post-workout snack that will give you all the energy post and pre-recovery. Healthy fats from the almonds, carbohydrates from the figs, and added protein from the protein powder. They are also vegan, paleo-friendly, and gluten-free!
You’ll only need 5 ingredients and they are super customizable as well! Did I mention it only takes a food processor or high-speed blender to make? All you need to do is process all the ingredients and in 10 minutes they are ready!
What You Need To Make These No-Bake Carrot Cake Energy Balls
- Carrot- The staple ingredient to make this carrot cake flavor, but you can omit it if you do not like carrot cake.
- Almond Butter- Any other nut butter will work, this helps to bind the energy balls together so it needs to be runny!
- Nuts- I used a mix of walnuts and almonds but any nuts of choice will work. I recommend pecans, almonds, or walnuts.
- Figs- Figs add the perfect sweetness to this recipe while keeping it refined and sugar-free! Replace this with dates if you do not have figs.
- Protein Powder- Any protein powder of your choice will work. You can also swap this out for almond flour or oat flour.
- Coconut Shreds- This is optional but adds a great texture to the outer coating.
How to Make These No-Bake Carrot Cake Energy Balls
- Combine all the ingredients in a food processor or high-speed blender.
- Blend until dough consistency, this should take about 5 minutes.
- Using an ice cream scooper scoop out 1 heaping tbsp size balls and roll them in your hands until round.
- Coat them with shredded coconut and enjoy!
Tips
- Store in the fridge for up to one week in an air-tight container for full freshness.
- I also love to enjoy these frozen when it gets hot out!
