No-Bake Carrot Cake Energy Balls
These carrot cake energy balls have all the flavors a regular carrot cake has except it is no-bake. It comes together with just 5 ingredients and makes the perfect pre or post-workout fuel.

- 1 Cup Grated Carrots
- ½ Cup Nuts of choice
- ½ Cup Figs or Dates
- ½ Cup Almond Butter
- ¼ Cup Protein Powder
- ½ Cup Coconut Shreds for coating *optional*
Combine all the ingredients in a food processor or high-speed blender.
Blend until dough consistency, this should take about 5 minutes.
Using an ice cream scooper scoop out 1 heaping tbsp size balls and roll them in your hands until round.
Coat them with shredded coconut and enjoy!
