No-Bake Carrot Cake Energy Balls

These carrot cake energy balls have all the flavors a regular carrot cake has except it is no-bake. It comes together with just 5 ingredients and makes the perfect pre or post-workout fuel.

Equipment

  • Food Processor or Blender

Ingredients
  

  • 1 Cup Grated Carrots
  • ½ Cup Nuts of choice
  • ½ Cup Figs or Dates
  • ½ Cup Almond Butter
  • ¼ Cup Protein Powder
  • ½ Cup Coconut Shreds for coating *optional*

Instructions
 

  • Combine all the ingredients in a food processor or high-speed blender.
  • Blend until dough consistency, this should take about 5 minutes.
  • Using an ice cream scooper scoop out 1 heaping tbsp size balls and roll them in your hands until round.
  • Coat them with shredded coconut and enjoy!
