Preheat the oven. Preheat your oven to 350°F. Grease a standard loaf pan or line it with parchment paper for easy removal.
Make the streusel. In a small bowl, combine the flour, cinnamon, and sweetener. Add the butter and mix with a fork or your fingers until crumbly. Set aside.
Mix the wet ingredients. In a large bowl, whisk together the eggs, pumpkin, banana, vanilla extract, maple syrup and melted butter or oil until smooth.
Add the dry ingredients. Add the flour, baking powder, cinnamon, and salt to the wet ingredients. Gently mix until just combined, being careful not to overmix.
Fill the loaf pan. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Add the streusel. Evenly sprinkle the cinnamon streusel over the top of the batter, gently pressing it down if needed.
Bake. Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Cool. Let the bread cool in the pan for about 10–15 minutes, then transfer it to a wire rack to cool completely before slicing.
Slice and enjoy. Once cooled, slice and serve! It’s especially delicious slightly warm with a cup of coffee.
