Say hello to the easiest and fluffiest pancakes that will brighten up anyone’s day. These pancakes are vegan and made in a blender. It is the perfect stack that tastes just like an apple pie but in pancake form.
I seriously cannot stop making pancakes because they are by far the easiest thing to make and they taste so dang good. There are so so many flavor combinations that you can make and I am just getting started. Let me know which one you want to see!
To get in the fall spirit I made some apple pie pancakes that have all the apple pie flavor from the ooey-gooey apple filling to the caramel sweetness. I keep saying this is the easiest pancake recipe you’ll ever make. Why? Well, it is made in a blender. No bowls or mixing involved. The blender does all the work. I like using a blender because it mixes so well and any lumps will not be missed. This is only vegan and when I tell others that are not vegan that these pancakes are they are shook because they are still so fluffy. The key to fluffy pancakes is consistency so make sure to let the batter sit! Now let’s talk about the ingredients…
Ingredients Needed to make these Vegan Blender Buttermilk Pancakes
Now that you have admired the delicious picture of these pancakes. It is time you make it! These pancakes are made with pantry staples and the toppings are endless!
- Rolled oatmeal– I used rolled oats but steel cut should also work because you will be blending them up. You can use gluten-free rolled oats if you are gluten-free.
- Protein Powder– I used a vanilla-based protein powder so the taste would be less subtle. My favorite is from Nuzest. Check them out here.
- Apple sauce- I used apple sauce to make them apple-flavored. I made my own by boiling a couple of apples until soft and placing them into the blender.
- Non-dairy milk- I used almond milk in this recipe, but feel free to use any milk of choice.
- Apple cider vinegar- This is needed to create the “buttermilk.” You can swap this out for lemon if you do not have any.
- Nut butter- The nut butter sweetens the oatmeal bars and adds a nice nutty flavor. I used ground up but any will do. You can also use maple syrup.
- Baking powder- This is our rising agent.
- Cinnamon
- Apple
- Coconut Oil– Any oil can be used here.
Tips to make the perfect pancakes
- Use a measuring cup to scoop the batter into the pan. This will ensure that every pancake is the same size.
- Make homemade apple sauce by boiling apples until soft and blending them in the blender until smooth.
- Heat the skillet on medium-low to ensure that the pancakes do not burn.
- Cover the pancakes with a lid and only flip when bubbles start to form. This will allow the pancakes to cook all the way through and they will be fluffy.
- Let the batter sit for 5-10 minutes for it to thicken. You do not want a runny batter.
- You can also freeze these and heat them through out the week.

Pancakes
- 1 ½ Cups Rolled Oatmeal
- ¼ Cup Vanilla Protein Powder
- 1 Cup Nondairy Milk
- 1 tsp Apple Cider Vinegar
- ⅓ Cup Apple Sauce
- 2 tsp Baking Powder
- 2 tbsp Nut Butter
- 1 tsp Cinnamon
Topping
- 1 Apple chopped
- 1 tsp Cinnamon
- 1 tbsp Coconut Oil
Instructions
- Begin by grabbing a blender and blending the oatmeal first until flour-like conistency.
- Then add in the remaining ingredients and blend until smooth.
- Let that sit for 5 mintues to thicken.
- Heat up a skillet on medium-low heat and grease with cooking spray or oil of choice.
- Scoop the batter into the pan and cover with a lid When bubbles start to form flip the pancakes and flip for an additional 30-60 seconds. Repeat until no batter is left.
- To make the apple topping, place the chopped-up apple pieces in the same pan with coconut oil and cinnamon. Cook until soft.
- Top the pancakes off with the apples and some caramel or maple syrup.
