I know what you are thinking ew, spinach? But YES spinach. The color may be throwing you off a little bit but this is a perfect way to add in veggies because you legit cannot even taste it. I have had moms tell me that they add spinach into their toddler’s pancakes and they enjoy it!
Ingredients Needed for Paleo Spinach Pancakes
- Paleo flour- To keep the recipe paleo I used paleo flour from King Arthur. You can use all purpose flour or gluten free if desired.
- Non-dairy milk- You can use any milk.
- Egg– This helps keep the pancakes fluffy and moist. Use a flax egg if vegan.
- Spinach– Ideally you would need to use fresh.
- Baking Powder- This is our rising agent.
- Salt
How to make Paleo Spinach Pancakes
- Begin by making the pancake mix by grabbing your blender and adding your spinach and wet ingredients into it. Blend the ingredients into well combined and there are no spinach lumps.
- Next, grab a medium-sized mixing bowl and add the dry ingredients. After combining the dry ingredients, add in the wet ingredients, and mix well.
- In a pan, heat up your non-stick pan with any cooking spray or vegan butter on medium-low heat.
- Scoop 1/3 cup of pancake batter onto the pan and cover with a lid until bubbles begin to appear. When there are bubbles the pancakes are ready to flip. Cook each side for about 2 minutes.
- Repeat step 4 until you run out of batter and top it off with your favorite toppings!
Tips to make the perfect pancakes
- Use a measuring cup to scoop the batter into the pan. This will ensure that every pancake is the same size.
- Heat the skillet on medium-low to ensure that the pancakes do not burn.
- Cover the pancakes with a lid and only flip when bubbles start to form. This will allow the pancakes to cook all the way through and they will be fluffy.
- Let the batter sit for 10 minutes for it to thicken. You do not want a runny batter.
- Top it off with maple syrup or nut butter of choice.
