Vegan Hummus Pasta w/ Spinach & Sundried Tomatoes

Hummus Pasta is my go-to when I need a quick lunch or dinner. It comes together in less than 15 minutes and only requires 2 ingredients, hummus, and pasta. This will be your new favorite pasta recipe. It's simple yet satisfying.

Ingredients
  

  • 8 oz Pasta of Choice
  • 1 Cup Hummus
  • 1 Cup Spinach
  • ΒΌ Cup Sundried Tomatoes
  • 1 Cup Pasta Water
  • Salt & Pepper

Instructions
 

  • Start by bringing a large pot of water to a boil and cooking your pasta as instructed on the packaging.
  • Once it is done, drain the pasta resetting about a cup of the pasta water.
  • Then add the pasta back into the pot on medium-low heat and add in the spinach and sun-dried tomatoes. Mix until the pasta is wilted down.
  • Lastly, add in the hummus and cup of pasta water, stirring constantly until it has reached your desired consistency. Add more water if needed.
  • Serve it with salt and pepper to taste.
