Vegan Hummus Pasta w/ Spinach & Sundried Tomatoes
Hummus Pasta is my go-to when I need a quick lunch or dinner. It comes together in less than 15 minutes and only requires 2 ingredients, hummus, and pasta. This will be your new favorite pasta recipe. It's simple yet satisfying.

- 8 oz Pasta of Choice
- 1 Cup Hummus
- 1 Cup Spinach
- ΒΌ Cup Sundried Tomatoes
- 1 Cup Pasta Water
- Salt & Pepper
Start by bringing a large pot of water to a boil and cooking your pasta as instructed on the packaging.
Once it is done, drain the pasta resetting about a cup of the pasta water.
Then add the pasta back into the pot on medium-low heat and add in the spinach and sun-dried tomatoes. Mix until the pasta is wilted down.
Lastly, add in the hummus and cup of pasta water, stirring constantly until it has reached your desired consistency. Add more water if needed.
Serve it with salt and pepper to taste.
