Banana Bread
- 120 g All Purpose Flour
- 60 g Almond Flour
- 3 Bananas
- 2 Eggs
- 60 g Maple Syrup
- 40 g Butter or Coconut Oil
- 5 g Vanilla Extract
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- Pinch of Salt
- 20 g Rainbow Sprinkles
Sugar Cookie Crumble Topping
- 30 g All Purpose Flour
- 15 g Almond Flour
- 15 g Softened Butter
- 2 g Vanilla Extract
- 10 g Rainbow Sprinkles
1. Preheat the oven: Preheat your oven to 350°F. Grease a standard loaf pan or line it with parchment paper, leaving a little overhang for easy removal.
2. Prepare the wet ingredients: In a large mixing bowl, mash your ripe bananas until mostly smooth. Add the remaining wet ingredients and mix until well combined.
3. Mix the dry ingredients: In a separate bowl, whisk together the flour and remaining dry ingredients until evenly combined.
4. Make the banana bread batter: Gradually add the dry ingredients to the wet ingredients, gently mixing until just combined. Be careful not to overmix to keep your banana bread soft and tender.
5. Prepare the sugar cookie crumble: In a separate bowl, combine the sugar cookie crumble ingredients until a crumbly mixture forms. You want a combination of small and larger buttery crumbs.
6. Assemble: Pour the banana bread batter into your prepared loaf pan and spread it evenly. Generously sprinkle the sugar cookie crumble topping over the entire surface.
7. Bake: Bake at 350°F for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the crumble begins browning too quickly, loosely tent the loaf with foil.
8. Cool and enjoy: Allow the banana bread to cool in the pan for 10–15 minutes before transferring to a wire rack. Let it cool before slicing so the loaf has time to set.
