In a large mixing bowl simply combine all the ingredients for the oat layer (rolled oats, protein powder, peanut butter, and maple syrup). Mix until a sticky dough forms. If the texture is not sticky enough add more peanut butter.
Next, in a separate bowl melt the chocolate chips in the microwave. Melt the chocolate in 20-second increments making sure to stir each time.
Transfer 3/4 of the oat mixture into a lined loaf pan.
Then, once the chocolate is fully melted, stir in the remaining peanut butter. The consistency should be smooth.
Once combined, pour the chocolate over the oat base. Sprinkle the remaining oat mixture on top.
Lastly, place that into the freezer to set for 1 hr.
Once fully set take it out of the freezer, and let it sit out for 10 minutes before cutting into squares. Store in the fridge or freezer and enjoy!
