Healthy Fudgy Flourless Sweet Potato Brownies

These brownies are secretly healthy, made with sweet potato and there is no added sugar! It is just as good as the real deal and it is only made with 5 staple ingredients.

Ingredients
  

  • 1 Cup Sweet Potato (about 2 Large)
  • 1 Cup Almond Butter
  • ¼ Cup Maple Syrup
  • 2 Eggs
  • ¼ Cup Cocoa Powder
  • ½ Cup Chocolate Chips
  • 1 Tsp Salt

Instructions
 

  • Start by boiling your sweet potatoes in a pot for 30-40 minutes or until tender. Another method is placing them into the oven to bake for 30-40 minutes as well or microwaving them for 10 minutes.
  • Once the sweet potatoes are soft and the skin peels off easily, remove them and deskin them.
  • Preheat your oven to 350F.
  • Place the sweet potatoes in a food process or blender along with the almond butter, eggs, maple syrup, and cocoa powder.
  • Pulse into well combined.
  • Next fold in the chocolate chips.
  • Pour the batter into a greased and lined 9x9 baking pan.
  • Place the brownies into the oven for 25-30 minutes.
  • Once baked, take the brownies out and let them cool for 1 hour.
  • Top them off with flaky sea salt and more chocolate chips.
