Cinnamon Raisin Banana Squares

I think cinnamon raisin is underrated and needs more attention so here come cinnamon raisin banana squares. It is a classic banana bread but in snacking square size. The raisins add for extra sweetness and pair perfectly with overripe bananas that are just as sweet. The squares are also super moist and fluffy, ideal for a breakfast or snack option.

Ingredients
  

  • 1 ½ cups Flour (Oat, Almond, or Paleo)
  • ¼ cup Nondairy Milk
  • ¼ cup Maple Syrup
  • 2 Flax Eggs
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2-3 Mashed Bananas
  • ¼ cup raisins
  • Cinnamon

Instructions
 

  • Preheat the oven to 325°F and line an 8x8 baking dish.
  • Start by mashing your bananas in a large bowl. If the bananas are not quite ripe yet place them in the oven at 350°F for about 10 minutes until the outer skin becomes dark. You will need very ripe bananas for this recipe because it adds sweetness.
  • Then to the bowl, add in the eggs, non-dairy milk, and maple syrup.  
  • Fold in the flour, baking powder, and baking soda.   
  • Pour the batter into the baking dish and top with more banana.
  • Place into the oven for 25 minutes or until it passes the toothpick test.  
  • Take it out of the oven, and drizzle some almond butter on top if you desire.
