Chickpea Snickerdoodle Energy Bites

Think soft-baked snickerdoodle cookie but in bite-size pieces. They are made in one blender and are packed with protein, healthy fats, and fiber. A perfect snack for on-the-go to keep you energized all day long!

Ingredients
  

  • ¾ cup drained chickpeas + save some juice to blend
  • 3 tbsp coconut sugar + more for coating
  • 3 tbsp nut butter
  • ¼ cup almond flour
  • pinch of salt

Instructions
 

  • Start by draining the chickpeas but not rinsing them and saving the juice.  
  • Then grab a blender or food processor and add in all the ingredients.  
  • Blend until a doughy consistency forms. If the mixture is too dry, add some of the aquafaba (chickpea juice).
  • Scoop out the mixture and form it into tablespoon-sized energy bites.  
  • Coat them with more coconut sugar and place them into the fridge to set or enjoy them right away.
