Chickpea Snickerdoodle Energy Bites
Think soft-baked snickerdoodle cookie but in bite-size pieces. They are made in one blender and are packed with protein, healthy fats, and fiber. A perfect snack for on-the-go to keep you energized all day long!

- ¾ cup drained chickpeas + save some juice to blend
- 3 tbsp coconut sugar + more for coating
- 3 tbsp nut butter
- ¼ cup almond flour
- pinch of salt
Start by draining the chickpeas but not rinsing them and saving the juice.
Then grab a blender or food processor and add in all the ingredients.
Blend until a doughy consistency forms. If the mixture is too dry, add some of the aquafaba (chickpea juice).
Scoop out the mixture and form it into tablespoon-sized energy bites.
Coat them with more coconut sugar and place them into the fridge to set or enjoy them right away.
