Apple Cinnamon Coffee Cake

Having a large cup of coffee in the morning is great and all but pairing it with this coffee cake will make your day 10x better. This coffee cake is so fluffy, moist, and perfectly sweet making it a great breakfast option.

Ingredients
  

Coffee Cake

  • 2 ¼ cups Flour (I used a mix of paleo and almond)
  • 3 Flax Eggs
  • ½ cup Apple Sauce
  • ¼ cup Maple Syrup
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • Cinnamon

Stresal Topping

  • ¼ cup Almond Flour
  • 3 tbsp Coconut Oil
  • 3 tbsp Coconut Sugar

Instructions
 

  • Preheat oven to 350°F.   
  • In a large bowl combine the flax eggs, apple sauce, and maple syrup.
  • Then add the dry ingredients and mix. Do not over mix.
  • Pour into a grease circular cake pan or a 9x9 square pan.   
  • To make the streusel add the flour, coconut sugar, and coconut oil in a small bowl. Combine until a crumble mixture forms. Add more coconut oil if the mixture is too dry.
  • Sprinkle the streusel on top of the cake and place into the oven for 25-30 minutes.
