One-Pan Easy Almond Croissant Baked Oatmeal

Another variation of my favorite breakfast! It is easy, healthy, and a great meal-prep breakfast option. This almond croissant flavor is to die for!

I have been obsessed with baked oatmeal for quite a while now and for good reason. It is so easy to make (made in one pan), super customizable, and super healthy! Since my trip to Paris, I have been eating so many almond croissants and even though I would love to eat one every day I know I need a switch up. So of course I decided to make a version of baked oatmeal inspired by almond croissant. Although it does not have the buttery and flaky dough, it does have all the flavors of the frangipane.

What you need:

  • Rolled Oats- I used Bob’s Red Mill Protein Oats for a bit more protein but feel free to use regular rolled oats. I recommend using rolled oats as opposed to quick-cooking oats as this can yield a different texture.
  • Banana- You can use pumpkin or apple sauce as an alternative
  • Almond Butter- This gives the oatmeal the almond croissant flavor but you can also use another nut butter of choice.
  • Non-Dairy Milk
  • Maple Syrup
  • Baking Powder
  • Almond Flour

To Do:

  1. Preheat the oven to 350F.
  2. In a 9×13 baking dish, mash the ripe bananas. If there are still small lumps, that is fine!
  3. Once the bananas are mashed, add the milk, almond butter, and maple syrup. Mix well.
  4. Then add in the dry ingredients (oats, baking powder).
  5. In a separate bowl, add the remaining almond butter, maple syrup, and almond flour. Mix until combined.
  6. Lastly, dollop 1 tbsp size spoonfuls onto the oat mixture and spread evenly on top.
  7. Top off the oats with almonds and place that into the oven for 30-35 minutes.
  8. Let the oat bake cool completely and top it off with powdered sugar.

Tips:

  • Store the left overs in an air-tight container for up to 7 days in the fridge. When ready to eat, pop it into the microwave for 45 seconds or until warm.
  • Swap out some of the oatmeal for protein powder.
