These brownies are secretly healthy, made with sweet potato and there is no added sugar! It is just as good as the real deal and it is only made with 5 staple ingredients.
Ingredients Needed:
- Sweet Potato- Sweet potatoes are a great source of fiber, full of antioxidants and vitamins. This makes the brownies ultra fudgy and adds sweetness.
- Eggs- You will need 2 eggs for the recipe. I have not tested this with flax eggs.
- Almond Butter- Any all-natural nut butter will work. I recommend using peanut butter as an alternative as other nut butter may yield a different flavor.
- Maple Syrup- You can also use honey.
- Cocoa Powder
- Chocolate Chips
- Sea Salt- A small amount is needed just to enhance the overall chocolate flavor.
How To:
- Start by boiling your sweet potatoes in a pot for 30-40 minutes or until tender. Another method is placing them into the oven to bake for 30-40 minutes as well or microwaving them for 10 minutes.
- Once the sweet potatoes are soft and the skin peels off easily, remove them and deskin them.
- Preheat your oven to 350F.
- Place the sweet potatoes in a food process or blender along with the almond butter, eggs, maple syrup, and cocoa powder.
- Pulse into well combined.
- Next fold in the chocolate chips.
- Pour the batter into a greased and lined 9×9 baking pan.
- Place the brownies into the oven for 25-30 minutes.
- Once baked, take the brownies out and let them cool for 1 hour.
- Top them off with flaky sea salt and more chocolate chips.
Tips:
- If you do not like sweet potatoes you can also use pumpkin!
- These can be stored for up to 3 days on the counter or 7 days in the fridge. Heat it up for 10-20 seconds in the microwave when ready to eat!
