A 5-minute cinnamon roll that is yeast-free, dairy-free, and vegan made in the microwave!

Was anyone else obsessed with Auntie Anne’s cinnamon rolls growing up (or even now)? Every time I went to the mall and walked by Auntie Anne’s stand the smell of their cinnamon rolls lingered in the air and I could not resist.

I saw this cinnamon roll recipe on Tik Tok that required no yeast and was made in the microwave which I thought was too good to be true so I had to try it myself. Safe to say, it worked! There are many variations to this recipe, but I decided to add a fig filling because figs were in season, but that is totally optional. The figs added an extra chewy texture that a typical cinnamon roll would not have.

Ingredients Needed To Make Fig Cinnamon Roll

Now that I’ve got you hooked on cinnamon rolls, be prepared for the easiest cinnamon roll recipe ever.

Dough

  • Paleo Flour– I used paleo to keep this grain free, but all purpose would work too.
  • Banana– This helped to bind the flour together to make it a dough. But I have seen recipes use yogurt or even apple sauce.
  • Lemon juice– This helps activate the baking powder
  • Baking Powder– This will help the cinnamon roll rise.
  • Non-dairy Milk– Add less or more depending on how sticky the dough is.

Filling

  • Date Spread– I like to use eatwannadate date spread but you can use almond butter, vegan butter, or coconut oil.
  • Coconut Sugar– This is essential for the cinnamon filling.
  • Cinnamon
  • Fig– This is totally optional but adds a nice chewy texture.

How To Make Fig Cinnamon Roll

  1. Grab a small ramekin.  
  2. Mash the banana into a small bowl and add in the remaining ingredients. Mix until a dough consistency forms. Add more milk if the mixture is too dry.
  3. In another bowl mix the filling.  
  4. Take some flour and sprinkle on the surface of where you will roll out the dough. Grab a rolling pin and roll the dough in a long rectangle. Spread the filling on the dough and roll the dough up tightly.
  5. Place the dough into the ramekin and pop into the microwave for 1-2 minutes.

Ingredients
  

Dough

  • ⅓ cup paleo flour
  • ¼ banana mashed
  • ½ tsp lemon juice
  • ½ tsp baking powder
  • 1 tbsp non-dairy milk

Filling

  • 2 tbsp date spread
  • 2 tbsp coconut sugar
  • ¼ tsp cinnamon
  • 1 chopped dried fig

Instructions
 

  • Grab a small ramekin.  
  • Mash the banana into a small bowl and add in the remaining ingredients. Mix until a dough consistency forms. Add more milk if the mixture is too dry.
  • In another bowl mix the filling.
