These cookies are the easiest dessert to make for Chinese New Year. They are crispy and buttery with a subtle amount of almond flavoring, for sure a crowd favorite.
If you are like me and just watch your mom throw it down in the kitchen and cook 10 dishes on Chinese New Year, but still want to contribute something to the table for Chinese New Year, these cookies are for you. They are super easy to make and come together in less than 30 minutes. They are even approved by my grandparents. They are even said to bring good luck into the new year!
Ingredients Needed To Make These Chinese Almond Cookies
Super simple and clean ingredients that you probably already have in your pantry. You can definitely swap out a lot of the ingredients to your liking.
- Almond Flour– I recommend using almond flour to give it the subtle almond taste, but oat flour would be a great substitute.
- Monk Fruit Sweetener– Any sweetener of choice will work, even coconut sugar.
- Flax Egg– If you are not vegan, you can use a regular egg.
- Vegan Butter– Make sure your butter is at room temperature and softened not melted. This will affect the dough.
- Baking Soda
- Almond Extract– You can swap this out for vanilla extract.
- Almonds
How To Make These Chinese Almond Cookies
These cookies come together in less than 30 minutes and the best part, they do not require chilling.
- Start by preheating the oven to 350°F.
- Then in a large bowl combine the almond flour, monk fruit sweetener, and baking soda. Mix well.
- Then add in the softened butter, egg, and almond extract. Mix well.
- Once well combined in a large bowl, scoop out 1 tbsp size cookie balls onto a lined cookie baking sheet.
- Then flatten out the cookies and place one almond on top. Repeat until no dough is left. Brush some melted vegan butter on top.
- Place into the oven and bake for 10-12 minutes.
- Let them cool completely before enjoying them!
Tips
- To get the crispy golden top-brush some melted butter on top before baking!
- Store these cookies in an air-tight container for up to one week on the counter.
- If you are allergic to almonds you can use another nut of choice.
- Make sure to flatten the cookies before baking because they do not spread as much as regular cookies.
