Think soft-baked snickerdoodle cookie but in bite-size pieces. They are made in one blender and are packed with protein, healthy fats, and fiber. A perfect snack for on-the-go to keep you energized all day long!

If you are like me and love to snack on something while working to keep you energized and focused, energy bites are the solution to your problem! These are the easiest energy bites that come together in the blender. The main ingredient here is chickpeas but I promise you, you cannot even taste them! It only adds extra protein and a gooey texture.

Ingredients Needed To Make Chickpea Snickerdoodle Energy Bites

  • Chickpeas– The key ingredient for extra protein.
  • Coconut Sugar– Adds sweetness and more for coating.
  • Nut Butter– Helps bind the bites together.
  • Almond Flour– You can swap this out for oat flour.
  • Salt– Brings out all the flavors

How To Make Chickpea Snickerdoodle Energy Bites

  1. Start by draining the chickpeas but not rinsing them and saving the juice.  
  2. Then grab a blender or food processor and add in all the ingredients.  
  3. Blend until a doughy consistency forms. If the mixture is too dry, add some of the aquafaba (chickpea juice).
  4. Scoop out the mixture and form it into tablespoon-sized energy bites.  
  5. Coat them with more coconut sugar and place them into the fridge to set or enjoy them right away.

  • ¾ cup drained chickpeas + save some juice to blend
  • 3 tbsp coconut sugar + more for coating
  • 3 tbsp nut butter
  • ¼ cup almond flour
  • pinch of salt
