Apple Cinnamon Coffee Cake

Having a large cup of coffee in the morning is great and all but pairing it with this coffee cake will make your day 10x better. This coffee cake is so fluffy, moist, and perfectly sweet making it a great breakfast option.

Say hello to your newest addiction in the morning…. & no I am not talking about your large cup of coffee. I am talking about this APPLE & CINNAMON COFFEE CAKE.

Ok, you can still have your large cup of coffee in the morning, but you absolutely need to pair it with a piece of this coffee cake. Although coffee cake does not have coffee in it, it sure does pair great with coffee or even tea. It is not overly sweet and only sweetened with a bit of maple syrup which is why it is a great breakfast option that won’t give you the afternoon crash that most sugar-heavy breakfast cakes will give you.

Ingredients Needed To Make Apple Cinnamon Coffee Cake

This coffee cake only requires a handful of ingredients and many ingredients can be swapped out if you do not have them. Read below for swaps.

  • Flour– I used a mix of paleo and almond flour but you can use a mixture of oat, all-purpose, or even gluten-free flour.
  • Flax Eggs– If you are not vegan feel free to use regular eggs.
  • Apple Sauce– If you do not like apples, use mashed banana or even pumpkin.
  • Maple Syrup– This is used to sweeten the cake. You can also use honey.
  • Baking Powder
  • Baking Soda
  • Cinnamon
  • Coconut Sugar– Any granulated sugar will work.
  • Coconut Oil– Use melted refined coconut oil so you cannot taste the coconut. Swap this out for butter.

How To Make Apple Cinnamon Coffee Cake

  1. Preheat oven to 350°F.   
  2. In a large bowl combine the flax eggs, apple sauce, and maple syrup.
  3. Then add the dry ingredients and mix. Do not over mix.
  4. Pour into a grease circular cake pan or a 9×9 square pan.   
  5. To make the streusel add the flour, coconut sugar, and coconut oil in a small bowl. Combine until a crumble mixture forms. Add more coconut oil if the mixture is too dry.
  6. Sprinkle the streusel on top of the cake and place into the oven for 25-30 minutes.

Ingredients
  

Coffee Cake

  • 2 ¼ cups Flour (I used a mix of paleo and almond)
  • 3 Flax Eggs

  • 1 tsp Baking Powder

Stresal Topping

  • ¼ cup Almond Flour
  • 3 tbsp Coconut Oil
  • 3 tbsp Coconut Sugar
