Hummus Pasta is my go-to when I need a quick lunch or dinner. It comes together in less than 15 minutes and only requires 2 ingredients, hummus, and pasta. This will be your new favorite pasta recipe. It’s simple yet satisfying.
This might be the easiest possible pasta recipe that anyone can make. This one is for my college students and parents who are short on time but also for those who can only cook the bare minimum. All this pasta requires is hummus and some greens if you are feeling it.
So why do I say this is the easiest possible pasta recipe?
Well, essentially this pasta only requires 2 ingredients, hummus, and pasta, but if you want to spice it up feel free to add more veggies. This hummus can be store-bought but also homemade of course. If you want to make your own I have a hummus recipe on the site already, just search “vegan hummus.” Keep in mind the hummus you choose will alter the taste depending on the different spices and flavors on the hummus.
Ingredients Needed For This Hummus Pasta
- Pasta– You can use any pasta you like. It does not matter the size or shape.
- Hummus– As I mentioned above, the hummus you choose will alter the taste so make sure the hummus is not too overpowering with spices and flavors.
- Spinach– This is optional. Feel free to add any other veggies.
- Sundried Tomatoes– This again is optional.
- Salt & Pepper
How To Make This Hummus Pasta
- Start by bringing a large pot of water to a boil and cooking your pasta as instructed on the packaging.
- Once it is done, drain the pasta resetting about a cup of the pasta water.
- Then add the pasta back into the pot on medium-low heat and add in the spinach and sun-dried tomatoes. Mix until the pasta is wilted down.
- Lastly, add in the hummus and cup of pasta water, stirring constantly until it has reached your desired consistency. Add more water if needed.
- Serve it with salt and pepper to taste.
Tips
- Make sure not to overcook the pasta. Once the water starts to boil, slowly add in the pasta and continue to stir on medium-low heat.
- Start with 1 cup of hummus and add more if needed. You do not have to add too much because it can be overpowering.
- Other veggie options are broccoli, kale, and carrots.
- This is a great make-ahead lunch or dinner option that can be stored in the fridge for up to 7 days.
- Add some cheese on top and pop it into the oven for 10 minutes so that it gets super melty and cheesy.
Vegan Hummus Pasta w/ Spinach & Sundried Tomatoes
Ingredients
- 8 oz Pasta of Choice
- 1 Cup Hummus
- 1 Cup Spinach
- ¼ Cup Sundried Tomatoes
- 1 Cup Pasta Water
- Salt & Pepper
