I was thinking about what to make for Thanksgiving and I instantly thought cornbread! Cornbread is known to be paired perfectly with chili or soup, the ultimate comfort food. But with this cornbread, it will be next level.
This is not just any ordinary cornbread it is vegan but also made will actual popcorn! Most people will opt to buy cornmeal from the store but I find that making it home saves money and is so much easier. Essentially the popcorn is just blended in a high-speed blender or food processor and it turns into a nice fine flour consistency. This is for sure the star of the show.

Ingredients Needed To Make This Vegan Cornbread
- Popcorn– Any popcorn will work. I use unsalted popcorn that I popped in the microwave prior. If you do not have popcorn you can use store-bought cornmeal.
- Flour– I recommend either paleo or all-purpose flour. I have not tested any other flours.
- Maple Syrup– This sweetens the cornbread. You can also use honey or melted vegan butter as well.
- Nondairy Milk– Any non-dairy or regular milk will work.
- Flax Eggs– Combine 1 tbsp flaxseeds with 3 tbsp water. Alternatively, use regular eggs.
- Baking Powder
- Baking Soda
How To Make this Vegan Cornbread
- Preheat oven to 350°F.
- In a food processor or high-speed blender place your popcorn of choice inside and pulse until flour-like consistency. This should take 30-60 seconds. Make sure there are no lumps.
- Transfer the cornmeal into a medium-sized bowl and sift in the flour. Then add in the baking powder and baking soda.
- In a separate bowl combine the flax eggs, nondairy milk, and maple syrup. Mix well.
- Transfer the wet ingredients to the dry ingredients. Slowly fold the wet ingredients into the dry ingredients. Do not overmix.
- Pour the batter into a greased 9×9 in a pan and place into the oven for 20 minutes.
- Take it out of the oven and serve with some melted vegan butter and more maple syrup.
