How To Make Chickpea Snickerdoodle Energy Bites
- Start by draining the chickpeas but not rinsing them and saving the juice.
- Then grab a blender or food processor and add in all the ingredients.
- Blend until a doughy consistency forms. If the mixture is too dry, add some of the aquafaba (chickpea juice).
- Scoop out the mixture and form it into tablespoon-sized energy bites.
- Coat them with more coconut sugar and place them into the fridge to set or enjoy them right away.
