Giant Single-Serve Chocolate Chip Cookie (Vegan)

This is quite literally the easiest single-serve chocolate chip cookie you will ever make. All you need is 6 ingredients and 10 minutes.

Sometimes I just want a single chocolate chip cookie for dessert at night but do not want to make a whole batch because 1. it takes too much time and 2. I won’t be able to eat it all. This is the perfect recipe for nights when I just want one and it for sure hits every time. Even better with a glass of milk.

Ingredients Needed

  • Almond Flour- I have not tested another flour.
  • Peanut Butter- You can also use another type of nut butter such as almond or cashew.
  • Chocolate Chips- Make sure you are using high-quality chocolate chips! It makes a difference. My favorite chocolates are from Hu Kitchen.
  • Maple Syrup- Another liquid sweetener of choice will work as well.
  • Ground Flax- I am using flax to keep this recipe vegan but you can also whisk an egg and use 2 tbsp of that.
  • Baking Soda

How To

  1. Preheat the oven to 350F.
  2. In a medium-sized bowl, combine the almond flour, ground flax, and baking soda. Alternatively, if you are using an egg add that in instead of the ground flax.
  3. Next, add in the nut butter and maple syrup. Mix with a spoon or fork until a sticky dough forms.
  4. Lastly, add in the chocolate chips, and do not forget to save some for the top.
  5. Scoop the dough out and form it into a large cookie shape. Place the cookie on a lined cookie sheet. Add the remaining chocolate on top.
  6. Place the cookie into the oven for about 8 minutes or until golden brown (it should be a little under-baked as it will continue to cook once out of the oven).
  7. Sprinkle with a touch of flaky sea salt and enjoy!

FAQ

  • This only makes 1 large cookie so feel free to split it up into 2 smaller ones or double the batch for more!
  • It is best eaten warm and with a glass of milk!
  • If the dough is too wet add more flour, if the dough is too dry add more nut butter or maple syrup.
  • Since this is vegan you can also eat the cookie dough!
