The oatmeal is blended up into oat flour and the added almond butter and carrot flavor mask the taste of the oatmeal. The vegan cream cheese frosting also elevates it and adds a hint of sweetness.
To be honest, I was never a fan of oatmeal because of the texture, but now that I found a way to make oat flour, I am hooked! There are so many ways you can use oatmeal and not just eat it the boring way of heating it on the microwave or stove. I guarantee if you do not like oatmeal try blending it up.

Ingredients Needed to Make These Carrot Cake Oatmeal Breakfast Bars
Carrot Cake
- Oatmeal– The key ingredient here. You can use either steel cut or old-fashioned. It does not matter because it will be blended up. You can also use gf if desired. It is also super easy to make your own by blending up oatmeal in a blender until fine.
- Carrot– What is a carrot cake without carrots?
- Almond Butter– Any nut butter will work, or you can even use maple syrup.
- Almond Milk– Any liquid of your choice will work.
- Flax Eggs– You can also use regular eggs!
- Baking Powder
- Baking Soda
- Cinnamon
- Dates and Pecans are optional
Vegan Cream Cheese Frosting
- Vegan Cream Cheese– I like using Kite Hill.
- Vegan Butter– Make sure the butter is at room temperature and soft.
- Maple Syrup– This adds a hint of sweetness.
How to Make these Carrot Cake Oatmeal Breakfast Bars
- Start by preheating the oven to 325°F and greasing an 8×8 pan.
- In a small bowl, add in the flax meal and water to create the flax egg and set aside for 5 minutes.
- Next, peel and grate the carrots in a large bowl. Add in the eggs, almond butter, flax egg, and almond milk.
- In another bowl combine the oat flour, cinnamon, baking powder, and baking soda. Mix until combined.
- Slowly fold the dry ingredients into the wet ingredients until well incorporated. Add in any additional optional add-ins such as nuts or dates.
- Transfer to a greased and lined baking tray. Place into the oven for 20-22 minutes.
- While that is in the oven, mix the cream cheese and softened butter until still peaks form.
- Let the carrot cake cool completely before frosting and garnish with toasted coconut flakes.

- Making oat flour is super easy at home! Save money and do not buy store-bought oat flour!
- Store this in an airtight container for up to 7 days.
- Add some toasted coconut flakes on top for an extra crunch!
