These samoas are made with 3 simple ingredients and require no baking!
If you are a huge fan of Girl Scout cookies and specifically the Samoas like me but want a healthier version, this one is for you! They start off with a no-bake “cookie” which is blended with toasted coconuts and the ooey gooey caramel flavor. Then it is finished off with a heavy coating of chocolate to satisfy that sweet tooth!
Ingredients Needed:

- Food Processor
- Optional: Donut mold
Samoas
- Dates: Any kind of date will work.
- Shredded Coconut: I like to toast the shredded coconut to add more of a toasted flavor.
- Chocolate: You will need to melt the chocolate. Any chocolate will work!
How To:
- Start by toasting the shredded coconuts in the oven at 350F for 2-3 minutes. Make sure to keep an eye on them so they do not burn.
- Next in a food processor, place the dates in first. Pulse into a sticky texture forms. If the dates are too hard, you can also add a tbsp of water to help them break down.
- Once the dates resemble a sticky texture, add in the toasted coconut. Pulse again until well incorporated.
- Scoop out the sticky dough, and form little balls. You can also place them into a donut pan to form the shape.
- Place them into the freezer to set (5 minutes) while you melt the chocolate.
- Once the chocolate has melted, take out the samoa base and dip the bottom into the chocolate. Then drizzle the remaining chocolate on top.
- Eat straight away or store them in the freezer!
FAQ
- How to store these? You can either store these in the fridge for up to 7 days or freezer for up to 1 month.
- If your dates are not soft, place them into a hot water bath for 10 minutes.
